Ingredients

  • 2 large Sweet potatoes
  • 2 large Eggs
  • 1 cup Almond flour
  • 2 tablespoons, finely chopped Green onion
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Coconut oil

Directions

Step 1

Peel and grate the sweet potatoes using a box grater or food processor.

Step 2

In a large bowl, combine the grated sweet potatoes, eggs, almond flour, green onion, garlic powder, salt, and black pepper. Mix until well combined.

Step 3

Heat a large skillet over medium heat and add the coconut oil.

Step 4

Scoop about 1/4 cup of the sweet potato mixture per pancake into the skillet, gently flattening each one with the back of the spoon to form compact pancakes.
