Ingredients

  • 1 lb Ground pork
  • 4 stalks Green onions, finely chopped
  • 2 tbsp Coconut aminos
  • 1 tbsp Ginger, minced
  • 2 cloves Garlic, minced
  • 1 tsp Sesame oil
  • 2 tbsp Fresh cilantro, chopped
  • 1 large Egg
  • 1 cup Coconut flour
  • 0.5 cup Arrowroot flour
  • 0.75 cup Boiling water
  • 0.5 tsp Salt
  • 2 tbsp Coconut oil for frying

Directions

Step 1

In a medium bowl, combine the ground pork, chopped green onions, coconut aminos, minced ginger, minced garlic, sesame oil, and chopped cilantro. Mix well until all the ingredients are thoroughly combined. Set aside for flavors to meld.

Step 2

In a separate large bowl, combine coconut flour, arrowroot flour, and salt.

Step 3

Slowly pour the boiling water into the flour mixture, stirring continuously with a wooden spoon until a dough begins to form.

Step 4

Once the dough is cool enough to handle, knead it in the bowl until it becomes smooth and pliable.

Step 5

Divide the dough into 12 equal portions. Roll each portion into a ball and flatten into a thin circle using a rolling pin, about 3 inches in diameter.

Step 6

Place about 1 tablespoon of the pork mixture onto the center of each dough circle.

Step 7

Fold the dough over the filling to create a dumpling shape, and pinch the edges to seal. If needed, wet the edges slightly to help them stick.

Step 8

Heat coconut oil in a non-stick skillet over medium heat.

Step 9

Once hot, arrange the potstickers in the skillet in a single layer and cook until the bottoms are golden brown, about 2-3 minutes.

Step 10

Carefully add 1/4 cup of water to the skillet and immediately cover with a lid to steam the potstickers. Cook for an additional 5 minutes or until the pork is cooked through.

Step 11

Remove the lid and allow any remaining water to evaporate. Serve warm with additional coconut aminos for dipping, if desired.
