Ingredients

  • 1 cup Almond flour
  • 1 cup Chopped nuts (such as almonds, pecans, or walnuts)
  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Dried unsweetened cranberries or raisins
  • 0.25 cup Coconut oil
  • 0.25 cup Honey or maple syrup
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 2 cups Fresh or frozen berries (such as blueberries, raspberries, or sliced strawberries)
  • 1 tablespoon Lemon juice
  • 1 tablespoon Arrowroot powder

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a mixing bowl, combine the fresh or frozen berries with lemon juice and arrowroot powder. Stir until the berries are coated evenly and set aside.

In another bowl, combine almond flour, chopped nuts, unsweetened shredded coconut, dried cranberries or raisins, ground cinnamon, and salt.

Melt the coconut oil in a small saucepan over low heat or in the microwave.
