  • 2 pounds beef chunks
  • 1 400 ml can of full-fat coconut milk
  • 1 400 ml can diced tomatoes
  • 1.5 teaspoons sea salt
  • 0.5 teaspoon black pepper
  • 0.25 cup, chopped fresh cilantro leaves

Directions

Step 1

Heat the coconut oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté until soft and translucent, about 5-7 minutes.

Stir in the minced garlic and ginger, cooking for another minute until fragrant.
