  • 2 pounds fresh lobster
  • 2 tablespoons ghee

  • 1 cup celery stalks, diced
  • 1 cup onion, diced
  • 4 cloves garlic, minced
  • 2 cups coconut milk
  • 2 tablespoons tomato paste
  • 4 cups fish stock
  • 1 piece bay leaf
  • 2 sprigs fresh thyme sprigs
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

In a large pot, bring 6 cups of water to a boil. Add the lobsters, cover, and cook for about 8-10 minutes until shells are bright red. Remove lobsters and allow them to cool.

Step 2

Once cool enough to handle, remove the meat from the shells and set it aside. Reserve the shells for further use.

Step 3

In a large soup pot over medium heat, melt the ghee and add the olive oil.

Add the diced carrots, celery, and onion. Cook for about 5 minutes until the vegetables are softened.

Stir in the minced garlic and cook for an additional 1 minute until fragrant.
