In a large pot, bring 6 cups of water to a boil. Add the lobsters, cover, and cook for about 8-10 minutes until shells are bright red. Remove lobsters and allow them to cool.
Once cool enough to handle, remove the meat from the shells and set it aside. Reserve the shells for further use.
In a large soup pot over medium heat, melt the ghee and add the olive oil.
Add the diced carrots, celery, and onion. Cook for about 5 minutes until the vegetables are softened.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Add the reserved lobster shells to the pot and cook, stirring occasionally, for 3-4 minutes.
Stir in the coconut milk, tomato paste, fish stock, bay leaf, and sprigs of thyme. Bring the mixture to a gentle simmer.
