Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
In a medium bowl, combine the almond flour, 0.5 cup of melted coconut oil, honey, vanilla extract, and sea salt. Mix well until a crumbly dough forms.
Press the dough evenly into the bottom of the prepared baking dish to form the crust.
Bake the crust in the preheated oven for 10-12 minutes, or until it is just beginning to turn golden brown.
While the crust is baking, prepare the lemon filling. In a large bowl, whisk together the eggs, lemon juice, lemon zest, coconut flour, 0.75 cups of melted coconut oil, and maple syrup until smooth and well combined.
Once the crust has finished baking, pour the lemon filling over the hot crust, spreading it evenly with a spatula.
Return the dish to the oven and bake for an additional 20-23 minutes, or until the filling is set and the edges are slightly golden.
Remove the lemon bars from the oven and allow them to cool completely in the dish on a wire rack.
Once cooled, refrigerate the lemon bars for at least 2 hours or until they are completely chilled and firm.
Cut into squares and serve chilled. Store any leftovers in an airtight container in the refrigerator.
