Ingredients

  • 2 cups Almond flour
  • 1 tablespoon Coconut flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 4 Large eggs
  • 0.25 cup Coconut oil (melted)
  • 0.25 cup Honey
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Coconut sugar
  • 1 teaspoon Cinnamon powder
  • 0.5 cup Raspberry paleo-friendly jam
  • 1 cup Coconut oil (for frying)

Directions

Step 1

In a large mixing bowl, combine almond flour, coconut flour, baking soda, and salt. Mix well and set aside.

Step 2

In another bowl, beat the eggs then add melted coconut oil, honey, and vanilla extract. Stir until well incorporated.

Step 3

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Cover the bowl with a cloth and let the dough rest for about 5 minutes to firm up.

In a small pan, heat coconut oil over medium heat until it reaches about 350°F (175°C).
