Ingredients

  • 4 pounds whole chicken
  • 3 tablespoons olive oil
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 1 tablespoon fresh sage
  • 4 large garlic cloves
  • 1 large lemon
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Pat the chicken dry with paper towels. Ensure the cavity is clean.

Step 3

In a small mixing bowl, combine chopped rosemary, thyme, sage, minced garlic, olive oil, sea salt, and black pepper to create an herb paste.

Step 4

Carefully loosen the skin over the chicken breast and thighs by gently inserting your fingers between the skin and the meat, being careful not to tear the skin.

Rub half of the herb paste directly under the skin and the other half over the top of the skin and inside the cavity of the chicken.

Cut the lemon in half and place it inside the cavity of the chicken.

Tie the legs together with kitchen twine to ensure even cooking.

Place the chicken breast-side up on a roasting rack set inside a roasting pan.

Roast the chicken in the preheated oven for about 1.5 hours or until the juices run clear and a meat thermometer inserted into the thickest part of the thigh reads at least 165°F (74°C).

Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
