Preheat your oven to 400°F (200°C).
Slice the sweet potato lengthwise into two thick slices, about 1/4 inch thick each. These will serve as the sandwich 'bread slices.'
Place the sweet potato slices on a baking sheet lined with parchment paper. Bake for 15 minutes or until they are soft but still hold their shape.
While the sweet potatoes are baking, heat a non-stick skillet over medium heat and add ghee or coconut oil.
Once the oil is hot, crack the egg into the skillet and season with sea salt and black pepper. Cook the egg until the whites are set and the yolk is cooked to your desired level. For over-easy, flip the egg gently and cook for an additional 30 seconds.
Mash the avocado in a small bowl with a pinch of salt and pepper. Set aside.
Once the sweet potato slices are done, remove them from the oven. Let cool slightly.
Assemble the sandwich by placing baby spinach leaves on one slice of baked sweet potato.
Top the spinach with the fried egg.
Spread the mashed avocado over the second slice of sweet potato.
Place the avocado-topped slice over the egg to complete your sandwich.
Serve immediately and enjoy your Paleo Classic Fried Egg Sandwich!
