Ingredients

  • 1 medium head Cauliflower
  • 2 tablespoons Rice vinegar
  • 1 medium Cucumber
  • 1 medium Carrot
  • 1 large Avocado
  • 5 sheets Nori sheets
  • 200 grams Sashimi-grade salmon or tuna
  • 3 tablespoons Coconut aminos
  • 1 teaspoon Wasabi paste
  • 1 tablespoon Fresh ginger
  • 1 tablespoon Sesame seeds

Directions

Step 1

Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower resembles rice grains.

Step 2

Transfer the processed cauliflower to a microwave-safe bowl and microwave on high for 3-4 minutes until tender. Allow it to cool slightly.

Step 3

Mix the cauliflower rice with rice vinegar and set aside.

Step 4

Peel the cucumber and carrot, and slice them into thin matchsticks.

Step 5

Halve and pit the avocado, then slice thinly.

Step 6

Place a nori sheet on a bamboo sushi mat, shiny side down.

Spread a thin layer of cauliflower rice over the nori, leaving a 1-inch strip at the top edge uncovered.

Arrange slices of fish, cucumber, carrot, and avocado across the center of the rice.
