Ingredients

  • 100 grams Almond flour
  • 100 grams Coconut sugar
  • 75 grams Coconut oil
  • 3 large Egg whites
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 0.5 teaspoon Almond extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a mini muffin tin or silicone financier molds.

Step 2

In a small saucepan, melt the coconut oil over low heat, then set aside to cool slightly.

Step 3

In a large mixing bowl, combine the almond flour, coconut sugar, and a pinch of salt.

Step 4

In a separate bowl, whisk the egg whites until they are frothy but not stiff, then add them to the almond flour mixture.

Step 5

Add the vanilla extract, almond extract, and melted coconut oil to the mixture, stirring until the batter is smooth and fully combined.
