Ingredients

  • 3 celery stalks, sliced

  • 8 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon thyme, dried
  • 1 teaspoon oregano, dried
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper, ground
  • 1 pound chicken breasts, boneless and skinless
  • 4 cups zucchini, spiralized into noodles
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

In a large pot, heat olive oil over medium heat.

Step 2

Add chopped onion, sliced carrots, and sliced celery. Cook and stir for 5-7 minutes until the vegetables start to soften.

Add minced garlic and cook for another 1-2 minutes until fragrant.
