Ingredients

  • 1.5 cups almond flour
  • 0.25 cup coconut flour
  • 0.5 cup coconut oil, melted
  • 0.25 cup maple syrup
  • 1 teaspoon vanilla extract
  • 15 medjool dates, pitted
  • 0.5 cup almond butter
  • 0.5 cup coconut cream
  • 0.25 teaspoon sea salt
  • 1 cup dark chocolate, chopped
  • 1 tablespoon coconut oil

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.

Step 2

In a medium bowl, mix together almond flour, coconut flour, melted coconut oil, maple syrup, and vanilla extract until well combined.

Step 3

Press this mixture firmly and evenly into the prepared baking pan to form the base. Bake in the preheated oven for 10-12 minutes or until slightly golden. Remove from the oven and let it cool.

Step 4

While the base is cooling, prepare the caramel layer. In a food processor, combine pitted medjool dates, almond butter, coconut cream, and sea salt. Blend until smooth and creamy.

Spread the date caramel mixture evenly over the cooled base. Refrigerate the slice while preparing the chocolate topping.

In a heatproof bowl, place the chopped dark chocolate and tablespoon of coconut oil. Melt them together using a double boiler or microwave in 30-second intervals until smooth, stirring frequently.

Pour the melted chocolate over the caramel layer, spreading it evenly with a spatula. Return the slice to the refrigerator and let it set for at least 2 hours or until firm.
