Ingredients

  • 1 piece (8-10 ounces) grass-fed ribeye steak
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 cups fresh spinach
  • 2 large eggs
  • 1 tablespoon ghee or clarified butter

Directions

Step 1

Remove the steak from the refrigerator and allow it to come to room temperature, about 20 minutes, before cooking.

Step 2

Pat the steak dry with paper towels to remove any excess moisture. This helps achieve a good sear.

Step 3

In a small bowl, mix the sea salt, black pepper, and garlic powder. Season both sides of the steak liberally with the spice mixture.

Step 4

Heat 1 tablespoon of olive oil in a cast-iron skillet over medium-high heat until it just begins to smoke.

Step 5

Place the steak into the skillet and cook for 3-4 minutes on each side, depending on thickness, for medium-rare. Adjust the cooking time to your preferred doneness.

Step 6

Remove the steak from the skillet and let it rest on a plate, loosely covered with foil, for about 5 minutes.

Step 7

In the same skillet, reduce the heat to medium and add 1 tablespoon of ghee or clarified butter.

Step 8

Crack the eggs into the skillet and cook them sunny-side up until the whites are set and the yolks remain runny, about 3-4 minutes.

Step 9

In a separate pan, heat the remaining 1 tablespoon of olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 2 minutes. Season with a pinch of salt if desired.

Step 10

Slice the steak against the grain into thin strips.

Step 11

To serve, divide the sautéed spinach between two plates, top with sliced steak, and place an egg on each plate alongside the steak.

Step 12

Enjoy your hearty and satisfying Paleo Classic Breakfast Steak!
