Ingredients

  • 2 cups almond flour
  • 1 cup arrowroot starch
  • 2 tablespoons coconut flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 3 large eggs
  • 0.5 cup unsweetened applesauce
  • 0.25 cup maple syrup
  • 1 teaspoon vanilla extract
  • 0.5 cup coconut oil
  • 1 quart coconut oil
  • 0.5 cup sugar-free fruit preserves
  • 0.25 cup powdered coconut sugar

Directions

Step 1

In a medium-sized bowl, combine the almond flour, arrowroot starch, coconut flour, baking soda, and salt. Mix well and set aside.

Step 2

In a separate large bowl, whisk together the eggs, unsweetened applesauce, maple syrup, and vanilla extract until well blended.

Step 3

Melt 0.5 cup of coconut oil and slowly incorporate it into the wet mixture while continuously stirring.

Step 4

Gradually add the dry ingredients into the wet ingredients, stirring gently until a thick dough forms.

Step 5

Heat the remaining coconut oil (about 1 quart) in a deep fryer or deep, heavy-bottomed pot to 350°F (175°C).

Step 6

Scoop out tablespoon-sized portions of dough and roll into smooth balls using your hands.

Step 7

Carefully place the dough balls into the hot oil, frying in batches for about 2-3 minutes per side until golden brown and cooked through.

Step 8

Remove the fried doughnuts using a slotted spoon and drain on a paper towel-lined plate.

Step 9

Using a piping bag fitted with a small nozzle, fill each cooled doughnut with sugar-free fruit preserves.

Step 10

Dust the doughnuts with powdered coconut sugar before serving to finish.
