Ingredients

  • 2 pounds ground beef
  • 2 tablespoons olive oil
  • 1 whole large yellow onion, diced
  • 1 whole red bell pepper, diced
  • 1 whole green bell pepper, diced
  • 2 whole medium carrots, diced
  • 4 cloves garlic cloves, minced
  • 28 ounces crushed tomatoes
  • 2 cups beef broth
  • 3 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 whole avocado, sliced (for serving)
  • 0.25 cup fresh cilantro, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onions and sauté for 3-4 minutes until translucent.

Stir in the red and green bell peppers and carrots, and continue to sauté for another 5 minutes.
