Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mix together almond flour, coconut flour, baking soda, and salt.
In a separate bowl, whisk the eggs and then stir in olive oil and apple cider vinegar.
Combine the wet and dry ingredients to form a dough. Divide the dough into four even pieces.
