Ingredients

  • 2 cups butternut squash
  • 2 tablespoons olive oil
  • 4 slices bacon
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 14-ounce can tomatoes, diced
  • 3 tablespoons coconut aminos
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground mustard
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Peel and cube the butternut squash into small, 1-inch pieces to resemble beans.

Step 3

In a large oven-proof skillet or Dutch oven, heat olive oil over medium heat.

Step 4

Add the bacon slices and cook until crispy, for about 5-7 minutes. Remove bacon, chop roughly, and set aside.

In the same skillet, add the chopped onion and cook for 5 minutes until translucent.

Add minced garlic to the onions and stir until fragrant, about 1 minute.

Step 7

Stir in the diced tomatoes with their juices, coconut aminos, apple cider vinegar, honey, smoked paprika, ground mustard, salt, and black pepper. Combine well.

Add the cubed butternut squash and water. Stir to coat squash pieces with the sauce.

Bring the mixture to a simmer, then cover and transfer to the preheated oven.

Bake for 45-50 minutes until the butternut squash is tender and the sauce has thickened.
