Ingredients

  • 1 cup Coconut flour
  • 1 cup Tapioca flour
  • 1 teaspoon Baking soda
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 3 large Eggs
  • 0.5 cup Unsweetened applesauce
  • 0.25 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.25 cup Coconut milk
  • 0.25 cup Ghee or coconut oil
  • 2 medium Granny Smith apples
  • 1 tablespoon Lemon juice
  • 0 for frying Coconut oil

Directions

Step 1

Peel, core, and dice the Granny Smith apples into small cubes. Toss them with lemon juice to prevent browning and set aside.

Step 2

In a large mixing bowl, whisk together the coconut flour, tapioca flour, baking soda, ground cinnamon, nutmeg, and salt until well combined.

Step 3

In another bowl, whisk the eggs until lightly beaten, then mix in the applesauce, maple syrup, vanilla extract, and coconut milk.
