Ingredients

  • 1 cup Medjool dates, pitted
  • 1 cup Unsweetened shredded coconut
  • 1 cup Almond flour
  • 2 tablespoons Cocoa powder (unsweetened)
  • 2 tablespoons Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Sea salt
  • 0.5 cup Chopped nuts (optional: almonds or walnuts)

Directions

Step 1

Place the pitted Medjool dates in a food processor. Pulse until they form a sticky paste.

Step 2

Add the unsweetened shredded coconut, almond flour, cocoa powder, melted coconut oil, vanilla extract, and sea salt to the food processor.

Step 3

If using, add the chopped nuts to the mixture. Pulse until all the ingredients are well combined and form a slightly sticky dough.

Step 4

Scoop out tablespoon-sized amounts of the mixture and roll them between your palms to form small balls.

Step 5

If desired, roll each ball in additional shredded coconut for a decorative coating.
