Ingredients

  • 2 cups raw almonds
  • 8 ounces dark chocolate (70% cacao or higher, dairy-free)
  • 1 tablespoon coconut oil
  • 1 teaspoon pure vanilla extract
  • 0.25 teaspoon sea salt
  • 0.5 cup coconut flakes (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Spread the raw almonds onto a baking sheet and bake for 10 minutes until they are lightly toasted and fragrant. Remove from the oven and let them cool completely.

Step 2

While the almonds are cooling, prepare the chocolate coating. In a medium-sized microwave-safe bowl, combine the dark chocolate and coconut oil. Microwave in 30-second intervals, stirring between each interval until the chocolate is melted and smooth.

Step 3

Once the chocolate is melted, stir in the pure vanilla extract and sea salt until fully incorporated.

Step 4

Line a large baking sheet with parchment paper.

Step 5

Add the toasted almonds to the bowl of melted chocolate. Stir until all almonds are thoroughly coated with chocolate.

Step 6

Using a fork, lift the chocolate-coated almonds one by one or in small clusters and place them onto the prepared baking sheet. Sprinkle them with coconut flakes if desired.

Step 7

Place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate has fully set and hardened.

Step 8

Once set, transfer the chocolate-coated almonds to an airtight container for storage. They can be kept at room temperature or in the refrigerator, depending on your preference for chocolate firmness.
