  • 4 large red bell peppers
  • 6 medium red chillies
  • 4 large garlic cloves
  • 1 inch piece fresh ginger
  • 1 cup apple cider vinegar
  • 1 cup honey
  • 1 teaspoon salt
  • 1 cup water
  • 2 tablespoons lime juice

Directions

Step 1

Begin by preparing the vegetables. Seed and roughly chop the red bell peppers. Trim the stems and halve the red chillies, leaving the seeds for extra heat or removing them for a milder jam.

Step 2

Peel the garlic cloves and the piece of fresh ginger. Chop the garlic and grate the ginger finely.

Step 3

In a food processor, combine the chopped red bell peppers, red chillies, garlic, and ginger. Pulse until the mixture becomes a coarse paste.

Step 4

Transfer the chilli paste into a large saucepan. Add the apple cider vinegar, honey, salt, and water to the pan. Stir to combine all the ingredients well.

Place the saucepan over medium heat and bring the mixture to a simmer. Reduce the heat to low and let it simmer gently for about 30-40 minutes, stirring occasionally, until the mixture thickens. Be patient during this time, as you want the liquid to reduce without burning the bottom.
