Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Coconut oil
  • 1 medium, chopped Onion
  • 3 minced Garlic cloves
  • 200 grams, sliced Mushrooms
  • 1 cup Coconut milk
  • 0.5 cup Chicken broth
  • 1 teaspoon, chopped Fresh thyme
  • 1 tablespoon, chopped Fresh parsley
  • 1 tablespoon Lemon juice

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

Step 2

In a large skillet over medium-high heat, add coconut oil and let it melt. Once hot, add the chicken breasts and sear on each side for about 5-6 minutes, or until golden brown. Remove the chicken from the skillet and set aside.

In the same skillet, reduce heat to medium. Add the chopped onion and sauté for 2-3 minutes until it starts to soften.
