Ingredients

  • 500 grams boneless, skinless chicken breast
  • 100 grams raw cashew nuts
  • 2 tablespoons coconut oil
  • 3 tablespoons coconut aminos
  • 1 inch piece fresh ginger
  • 3 cloves garlic
  • 1 medium red bell pepper
  • 150 grams small broccoli florets
  • 2 stalks green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Dice the chicken breast into bite-sized pieces and season with salt and black pepper.

Step 2

Peel and grate the ginger and mince the garlic cloves. Set aside.

Step 3

Slice the red bell pepper into thin strips and chop the green onions.

Step 4

In a large skillet, heat 1 tablespoon of coconut oil over medium-high heat.

Add the raw cashew nuts and toast them for about 2-3 minutes until golden brown, stirring frequently. Remove from the skillet and set aside.
