Ingredients

  • 4 medium zucchini
  • 1 pound chicken breast
  • 0.25 cup coconut aminos
  • 4 cups chicken broth
  • 1 inch, grated ginger
  • 3 minced garlic cloves
  • 2 sliced green onions
  • 2 medium, julienned carrots
  • 1 cup, sliced button mushrooms
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 juiced lime
  • 0.5 cup coconut milk

Directions

Step 1

Use a spiralizer to create zucchini noodles from the zucchinis, and set them aside.

Step 2

Slice the chicken breast into thin strips and season with salt and black pepper.

Step 3

In a large pot, heat olive oil over medium heat. Add the chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

Step 4

In the same pot, add grated ginger and minced garlic. Sauté for 1-2 minutes until fragrant.

Step 5

Pour the chicken broth into the pot and bring it to a simmer. Stir in coconut aminos, lime juice, and coconut milk.

Step 6

Add the sliced mushrooms and julienned carrots to the broth and let them cook for 5 minutes until slightly tender.

Step 7

Return the cooked chicken to the pot and simmer for another 2-3 minutes.

Step 8

Carefully add the zucchini noodles to the pot and stir gently. Cook for an additional 2-3 minutes until the noodles are tender but not mushy.

Add sliced green onions just before serving and adjust seasoning with additional salt and pepper, if needed.
