  • 1 avocado
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, finely chopped
  • 0.5 cup cilantro, chopped
  • 8 pieces lettuce leaves, large
  • 1 jalapeño, thinly sliced (optional)

Directions

Step 1

In a small bowl, combine olive oil, lime juice, ground cumin, paprika, garlic powder, onion powder, salt, and black pepper.

Place chicken thighs in a resealable plastic bag or a shallow dish, and pour the marinade over the chicken.

Seal the bag or cover the dish, and let the chicken marinate in the refrigerator for at least 1 hour, or up to overnight for more flavor.
