Ingredients

  • 500 grams ground chicken
  • 50 grams almond flour
  • 1 medium, finely chopped onion
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 0.5 teaspoon red chili powder
  • 2 tablespoons, finely chopped fresh cilantro
  • 2 tablespoons, finely chopped fresh mint
  • 1 teaspoon or to taste sea salt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 8 pieces bamboo skewers

Directions

Step 1

Soak the bamboo skewers in water for at least 30 minutes to prevent burning during cooking.

Step 2

In a large mixing bowl, combine the ground chicken with almond flour, chopped onion, ginger-garlic paste, coriander powder, cumin powder, garam masala, red chili powder, chopped cilantro, chopped mint, sea salt, olive oil, and lemon juice.

Step 3

Mix the ingredients well with your hands or a spatula until they are fully incorporated.

Step 4

Take a small portion of the chicken mixture and mold it around each soaked skewer, pressing firmly to ensure it sticks. Repeat with remaining mixture and skewers.

Step 5

Preheat a grill or grill pan over medium-high heat. If using a grill pan, brush it lightly with additional olive oil.

Step 6

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally to ensure even cooking and a nice char on all sides. The internal temperature should reach 165°F (74°C).

Remove the skewers from the grill and let them rest for a few minutes.
