Ingredients

  • 1.5 pounds chicken breast
  • 0.25 cup coconut aminos
  • 2 tablespoons lime juice
  • 0.25 cup coconut milk
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric powder
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 0.5 cup almond butter
  • 0.25 cup warm water
  • 1 tablespoon honey
  • 12 pieces bamboo skewers

Directions

Step 1

Soak the bamboo skewers in water for at least 30 minutes to prevent burning during grilling.

Step 2

Cut the chicken breast into thin strips, around 1-inch wide.

Step 3

In a mixing bowl, combine coconut aminos, lime juice, coconut milk, grated ginger, minced garlic, cumin, coriander, turmeric, cayenne pepper, sea salt, and black pepper to create the marinade.

Step 4

Place the chicken strips in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably up to 2 hours for maximum flavor.

Step 5

While the chicken is marinating, prepare the almond butter dipping sauce by mixing almond butter, warm water, and honey in a bowl. Stir until smooth and well combined.

Step 6

Preheat your grill or grill pan to medium-high heat.

Step 7

Thread the marinated chicken strips onto the soaked skewers.

Step 8

Grill the chicken skewers for about 4-5 minutes on each side, or until the chicken is fully cooked through and has nice grill marks.

Step 9

Serve the chicken satay skewers hot with the almond butter dipping sauce on the side.
