Ingredients

  • 1 pound boneless skinless chicken breasts
  • 10 cups fresh spinach
  • 2 tablespoons coconut oil
  • 1 medium onion
  • 4 garlic cloves
  • 1 inch piece fresh ginger
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon cayenne pepper
  • 1 cup coconut milk
  • 1 tablespoon lemon juice
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Cut the chicken breasts into bite-sized cubes. Season with salt and pepper.

Step 2

Wash the spinach thoroughly. Blanch the spinach in boiling water for 1-2 minutes until wilted. Drain and rinse with cold water. Puree in a blender until smooth and set aside.

Finely chop the onion, garlic cloves, and ginger.

Heat coconut oil in a large skillet over medium heat. Add the cumin seeds and toast for about 30 seconds until fragrant.

Add the chopped onion to the skillet and sauté until the onions are translucent, about 5 minutes.
