Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups fresh basil leaves
  • 0.25 cup pine nuts
  • 2 pieces garlic cloves
  • 2 tablespoons lemon juice
  • 2 tablespoons nutritional yeast
  • 6 pieces large lettuce leaves (such as romaine or butter lettuce)
  • 1 piece avocado
  • 1 cup cherry tomatoes

Directions

Step 1

Preheat a grill or grill pan over medium-high heat.

Step 2

Drizzle the chicken breasts with 1 tablespoon of olive oil and season with salt and pepper on both sides.

Step 3

Grill the chicken for 6-7 minutes on each side, or until fully cooked and grilled marks appear. The internal temperature should reach 165°F (74°C).

Remove the chicken from the grill, allow to rest for a few minutes, then slice thinly.
