Ingredients

  • 1 pound boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0.5 cup cucumber, grated
  • 1 cup coconut milk yogurt
  • 1 tablespoon dill, chopped
  • 0.5 cup red onion, thinly sliced
  • 1 tomato, diced
  • 8 large lettuce leaves

Directions

Step 1

In a medium bowl, mix together olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper.

Step 2

Add chicken thighs to the bowl and coat them evenly with the marinade. Let it marinate for at least 15 minutes.

Step 3

While the chicken is marinating, prepare the paleo tzatziki sauce. In a small bowl, combine grated cucumber, coconut milk yogurt, and chopped dill. Stir well and set aside in the fridge.
