  • 1 medium red bell pepper

  • 2 tablespoons olive oil
  • 1 whole lime
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 cloves garlic
  • 8 leaves romaine lettuce leaves
  • 2 tablespoons fresh cilantro

Directions

Step 1

Begin by thinly slicing the chicken breasts into strips.

Step 2

Cut the red, yellow, and green bell peppers into thin strips and slice the onion thinly.

Step 3

In a large bowl, mix together olive oil, juice of the lime, ground cumin, chili powder, paprika, sea salt, and black pepper.

Mince the garlic and add it to the marinade. Stir to combine.

Add the sliced chicken, bell peppers, and onions to the bowl and toss to coat everything evenly with the marinade. Let it sit for at least 10 minutes.
