Ingredients

  • 1 lb Chicken breasts
  • 2 tbsp Olive oil
  • 1 Lime
  • 2 cloves Garlic
  • 2 tsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Onion powder
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 1 Red bell pepper
  • 1 Yellow bell pepper
  • 1 Green bell pepper
  • 1 Onion
  • 2 tbsp Cilantro
  • 8 Large lettuce leaves

Directions

Step 1

Begin by slicing the chicken breasts into thin strips and place them in a large bowl.

Step 2

In a small bowl, combine the olive oil, juice from one lime, minced garlic cloves, chili powder, cumin, paprika, onion powder, salt, and black pepper. Mix well to create the marinade.

Step 3

Pour the marinade over the chicken strips, ensuring they are well-coated. Cover and let marinate for at least 15 minutes, or up to 1 hour in the refrigerator.

Step 4

While the chicken is marinating, slice the red, yellow, and green bell peppers, as well as the onion, into thin strips.

Step 5

Heat a large skillet over medium-high heat. Once hot, add the marinated chicken strips to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

Step 6

Remove the chicken from the skillet and set aside. In the same skillet, add the sliced peppers and onion. Sauté for about 5 minutes, stirring frequently, until the vegetables are tender-crisp.

Step 7

Return the chicken to the skillet with the peppers and onion. Stir everything together and cook for an additional 2 minutes to heat through.

Step 8

Remove from heat and sprinkle the dish with chopped cilantro.

Step 9

To serve, spoon the chicken and vegetable mixture onto large lettuce leaves, wrapping them into tacos.

Step 10

Enjoy your flavorful and healthy Paleo Chicken Fajita Tacos!
