  • 1 pound boneless, skinless chicken breasts
  • 0.5 cup coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon coconut oil
  • 2 tablespoons lime juice
  • 1 large avocado
  • 1 medium red bell pepper
  • 1 large carrot
  • 2 pieces green onions
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 6 leaves large lettuce leaves (e.g. Romaine, Butterhead)

Directions

Step 1

Cut the chicken breasts into thin strips.

Step 2

In a bowl, combine the coconut milk, curry powder, lime juice, sea salt, and black pepper. Mix well.

Step 3

Add the chicken strips to the coconut milk mixture and let them marinate for at least 15 minutes.

Meanwhile, slice the red bell pepper into thin strips and julienne the carrot. Slice the green onions thinly.
