Begin by spiralizing the zucchini into noodles using a spiralizer, or cut them into thin strips if you do not have one. Set aside.
Peel and julienne the carrots and slice the bell pepper into thin strips. Chop the green onions and set aside.
Mince the garlic and grate the ginger. Set these aside separately.
Cut the chicken breast into thin strips.
In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken strips and season with sea salt and black pepper. Stir-fry the chicken until it is browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
