Ingredients

  • 1 pound chicken breast
  • 2 large zucchini
  • 2 medium carrot
  • 1 large red bell pepper
  • 4 green onions
  • 3 cloves garlic
  • 0.25 cup coconut aminos
  • 2 tablespoons sesame oil
  • 2 tablespoons olive oil
  • 1 inch piece ginger
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon sea salt

Directions

Step 1

Begin by spiralizing the zucchini into noodles using a spiralizer, or cut them into thin strips if you do not have one. Set aside.

Step 2

Peel and julienne the carrots and slice the bell pepper into thin strips. Chop the green onions and set aside.

Step 3

Mince the garlic and grate the ginger. Set these aside separately.

Step 4

Cut the chicken breast into thin strips.

Step 5

In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken strips and season with sea salt and black pepper. Stir-fry the chicken until it is browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

Step 6

In the same skillet, add the remaining olive oil and sesame oil. Add the minced garlic and grated ginger, stirring for about 1 minute until fragrant.

Step 7

Add the carrots, red bell pepper, and half of the green onions to the skillet. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.

Step 8

Return the cooked chicken to the skillet. Pour in the coconut aminos and toss everything together until well combined.

Step 9

Add the zucchini noodles to the skillet and continue to stir-fry for 2-3 minutes, until the noodles are softened but not mushy.

Step 10

Adjust seasoning with additional sea salt and black pepper if necessary. Remove from heat.

Step 11

Garnish with the remaining chopped green onions before serving.

Step 12

Serve hot and enjoy this healthy, Paleo-friendly Chicken Chow Mein!
