Ingredients

  • 2 pieces chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon chipotle powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 whole lime
  • 2 whole avocados
  • 0.25 cup red onion
  • 1 cup cherry tomatoes
  • 0.25 cup cilantro leaves
  • 2 cups cauliflower rice
  • 1 tablespoon coconut oil
  • 1 whole jalapeño pepper

Directions

Step 1

In a small bowl, mix the chipotle powder, garlic powder, paprika, salt, and black pepper.

Step 2

Rub the chicken breasts with olive oil and coat them with the spice mixture evenly.

Step 3

Heat a grill pan or a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).

Let the chicken rest for a few minutes, then slice it into thin strips.
