Ingredients

  • 2 pieces Chicken breast
  • 3 tablespoons Coconut aminos
  • 1 inch piece, grated Ginger
  • 2 cloves, minced Garlic
  • 2 tablespoons Coconut oil
  • 2 stalks, thinly sliced Green onions
  • 1.5 cups Almond flour
  • 0.5 cup Tapioca starch
  • 0.75 cup Coconut milk
  • 1 teaspoon Baking powder
  • 1 Egg
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Cut the chicken breasts into small, bite-sized pieces.

Step 2

In a bowl, combine the chicken with coconut aminos, grated ginger, and minced garlic. Let it marinate for at least 15 minutes.

Step 3

Heat 1 tablespoon of coconut oil in a skillet over medium heat. Add the marinated chicken and cook until fully cooked through, about 8-10 minutes. Stir in the sliced green onions and cook for another minute. Remove from the heat and set aside.

In a mixing bowl, combine almond flour, tapioca starch, baking powder, and salt.

In another bowl, whisk together coconut milk and egg.
