Ingredients

  • 500 grams Chicken breast
  • 2 tablespoons Olive oil
  • 1 medium, chopped Onion
  • 3 minced Garlic cloves
  • 200 grams, sliced Mushrooms
  • 1 medium, diced Carrot
  • 400 ml Coconut milk
  • 200 ml Chicken broth
  • 200 grams Almond flour
  • 1 Egg
  • 60 grams, melted Ghee
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon, dried Thyme
  • 1 teaspoon, dried Rosemary

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a large frying pan, heat 1 tablespoon of olive oil over medium heat.

Step 3

Add the chopped onion and garlic, sautéing until translucent.

Step 4

Add the sliced mushrooms and diced carrot, cooking for another 5 minutes until softened.

Step 5

Cut the chicken breast into bite-sized pieces and season with salt and pepper.

Step 6

Move the vegetables to the side of the pan and add the remaining tablespoon of olive oil.

Step 7

Add the chicken pieces to the frying pan and cook until they are lightly browned.

Stir in the coconut milk, chicken broth, thyme, and rosemary, then let the mixture simmer for 10 minutes.
