Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 medium onion
  • 2 tbsp coconut oil
  • 3 cloves minced garlic
  • 1 inch piece fresh ginger
  • 3 tbsp coconut aminos
  • 0.5 tsp crushed red pepper flakes
  • 0.25 tsp black pepper
  • 0.5 tsp sea salt
  • 2 stalks green onions
  • 0.25 cup fresh cilantro leaves

Directions

Step 1

Start by slicing the chicken breasts into thin strips and set them aside.

Step 2

Cut the red, yellow, and green bell peppers into thin strips. Slice the onion into thin wedges. Finely chop the fresh ginger and green onions. Set these aside with the other vegetables.

Step 3

Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.

Add the chicken strips to the pan. Cook for about 5 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the pan and set it aside.
