Ingredients

  • 2 pieces Chicken breasts
  • 240 ml Coconut milk
  • 120 ml Dill pickle juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 120 grams Almond flour
  • 30 grams Coconut flour
  • 1 teaspoon Baking powder
  • 3 large Eggs
  • 60 ml Coconut oil
  • 30 ml Honey
  • 5 ml Apple cider vinegar

Directions

Step 1

Begin by preparing your chicken. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.

Step 2

In a large bowl, mix the coconut milk and dill pickle juice. Add the chicken breasts, cover, and refrigerate for at least an hour, or ideally overnight to marinate.

To make the biscuits, preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a mixing bowl, combine almond flour, coconut flour, and baking powder.

In another bowl, whisk together 2 eggs, melted coconut oil, honey, and apple cider vinegar.

Gradually mix the wet ingredients into the dry ingredients until a dough forms.

Scoop about 1/4 cup portions of dough onto the lined baking sheet, shaping them into circles.
