Ingredients

  • 1 head cauliflower
  • 2 large eggs
  • 3 tablespoons nutritional yeast
  • 0.5 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons coconut oil
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Break the cauliflower into florets and pulse them in a food processor until they resemble the texture of rice.

Step 3

In a large bowl, combine the cauliflower 'rice', eggs, nutritional yeast, almond flour, garlic powder, onion powder, sea salt, and black pepper. Mix well until all ingredients are fully incorporated.

Step 4

Using your hands, form the mixture into small patties, about 3 inches in diameter, and place them onto the prepared baking sheet.

Step 5

Melt the coconut oil in a small saucepan over medium heat, then brush the tops of each rice cake with the melted coconut oil.

Step 6

Bake in the preheated oven for 25-30 minutes, or until the cakes are golden brown and firm to the touch.

Step 7

Remove from oven and let them cool slightly on the baking sheet to firm up further.

Step 8

Garnish with chopped fresh parsley and lemon zest before serving.
