Ingredients

  • 3 whole large zucchinis
  • 1 cup raw cashews
  • 0.25 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 0.5 cup water
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Wash and dry the zucchinis. Slice them into 1/4-inch thick rounds.

Step 3

Spread the zucchini slices evenly on the prepared baking sheet. Drizzle them with 1 tablespoon of olive oil and sprinkle a pinch of salt and pepper over them.

Step 4

Bake the zucchini in the preheated oven for 15 minutes until they start to soften.

Step 5

While the zucchini is baking, prepare the cashew cheese. In a high-speed blender, combine the cashews, nutritional yeast, lemon juice, garlic powder, onion powder, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, 1 tablespoon of olive oil, and water.

Step 6

Blend on high until the mixture is smooth and creamy, stopping to scrape down the sides as needed.

Step 7

Once the zucchini slices are done baking, remove them from the oven and spoon the cashew cheese mixture over each slice evenly.

Step 8

Return the zucchini to the oven and bake for another 10 minutes until the 'cheese' is slightly golden and bubbly.

Step 9

Remove the zucchini from the oven. Let it cool for a few minutes, then sprinkle with freshly chopped parsley before serving.

Step 10

Serve warm as a delightful side dish or a light main course.
