Ingredients

  • 1 cup Almond flour
  • 1 4 cup Arrowroot powder
  • 2 tablespoons Coconut flour
  • 3 large Eggs
  • 1 4 cup Almond milk
  • 3 tablespoons Nutritional yeast
  • 1 1/2 teaspoon Salt
  • 3 tablespoons Coconut oil
  • 1 4 cup Dairy-free cheese shreds (optional)

Directions

Step 1

In a medium-sized bowl, combine the almond flour, arrowroot powder, coconut flour, nutritional yeast, and salt.

Step 2

Beat the eggs and almond milk together in a separate bowl until well mixed.

Step 3

Slowly add the wet ingredients to the dry ingredients, stirring continuously to form a smooth, slightly sticky dough.

Step 4

If using the optional dairy-free cheese shreds, fold them into the dough.

Step 5

Divide the dough into 8 equal portions and shape each portion into a patty about 1/2-inch thick.

Step 6

Heat the coconut oil in a large skillet over medium heat.

Step 7

Once the oil is hot, place a few arepas in the skillet, making sure not to overcrowd the pan.

Step 8

Cook the arepas for about 4-5 minutes on each side, or until they are golden brown and slightly crispy on the outside.

Step 9

Transfer the cooked arepas to a plate lined with paper towels to absorb any excess oil.

Step 10

Repeat the cooking process with the remaining arepas, adding more coconut oil to the skillet as needed.

Step 11

Serve the arepas warm, either as they are or with your choice of Paleo-friendly toppings such as avocado, salsa, or extra dairy-free cheese.
