Ingredients

  • 1.5 cups almond flour
  • 0.25 cup coconut flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 0.25 cup honey
  • 0.25 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 0.5 cup sliced almonds
  • 0.25 cup unsweetened shredded coconut
  • 0.25 cup chopped dried fruit (optional, such as apricots or cranberries)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the almond flour, coconut flour, baking soda, sea salt, and cinnamon.

Step 3

In a small saucepan over low heat, melt the coconut oil and honey together. Stir until well combined. Remove from heat and let cool slightly.

In a medium bowl, beat the egg lightly, then add the melted honey and coconut oil mixture, and vanilla extract. Mix until smooth.
