  • 1 large head cauliflower florets
  • 2 tablespoons coconut oil
  • 1 medium, diced onion

  • 1 medium, diced red bell pepper
  • 0.5 cup peas
  • 2 large eggs
  • 3 tablespoons coconut aminos
  • 3 thinly sliced green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup fresh cilantro

Directions

Step 1

Begin by making the cauliflower rice. Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower is small and resembles the texture of rice. Be careful not to over-process.

Step 2

Heat 1 tablespoon of coconut oil in a large skillet over medium heat. Add the diced onion and sauté for 3 minutes until it starts to soften.
