Ingredients

  • 600 grams carrots
  • 2 tablespoons coconut oil
  • 1 large onion
  • 3 pieces garlic cloves
  • 2 teaspoons ground coriander
  • 1 liter vegetable broth (gluten-free)
  • 20 grams fresh coriander
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel the carrots and chop them into small, even-sized pieces for even cooking.

Step 2

Dice the onion and mince the garlic cloves.

Step 3

In a large pot, heat the coconut oil over medium heat. Add the onion and garlic, sautéing until the onion becomes translucent, about 5 minutes.

Stir in the ground coriander and cook for an additional minute until fragrant.

Add the chopped carrots to the pot and pour in the vegetable broth. Season with salt and black pepper.
