Peel the carrots and chop them into small, even-sized pieces for even cooking.
Dice the onion and mince the garlic cloves.
In a large pot, heat the coconut oil over medium heat. Add the onion and garlic, sautéing until the onion becomes translucent, about 5 minutes.
Stir in the ground coriander and cook for an additional minute until fragrant.
