Ingredients

  • 1 pound Flank steak
  • 2 large Sweet potatoes
  • 3 tablespoons Avocado oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Cumin
  • 2 tablespoons Lime juice
  • 2 tablespoons Coconut aminos
  • 1 large Avocado
  • 0.25 cup Fresh cilantro
  • 0.5 small Red onion

Directions

Step 1

In a small bowl, mix together 2 tablespoons of avocado oil, garlic powder, paprika, salt, pepper, cumin, lime juice, and coconut aminos to create a marinade.

Step 2

Place the flank steak in a shallow dish and pour the marinade over it, ensuring it is evenly coated. Cover and refrigerate for at least 20 minutes, or up to 2 hours for more flavor.

Step 3

Preheat the oven to 425°F (220°C).

Step 4

While the steak is marinating, peel and cut the sweet potatoes into thin fries approximately 1/4-inch thick.

Step 5

In a large bowl, toss the sweet potato fries with 1 tablespoon of avocado oil and a pinch of salt. Spread them out in a single layer on a baking sheet lined with parchment paper.

Step 6

Bake the sweet potatoes in the preheated oven for 25-30 minutes, flipping halfway through, until crispy and golden brown.

Step 7

While the fries are baking, remove the flank steak from the marinade and pat dry with paper towels.

Step 8

Heat a grill pan or a heavy skillet over medium-high heat. Sear the steak for about 3-4 minutes per side for medium-rare, or until your desired doneness. Let rest for 5 minutes before slicing.

Step 9

Dice the avocado, chop the cilantro, and finely dice the red onion.

Step 10

Once the sweet potato fries are done, place them on a serving platter. Top with sliced carne asada, diced avocado, and sprinkle with cilantro and red onion.

Step 11

Serve immediately and enjoy this delicious Paleo-friendly meal!
