Ingredients

  • 4 large eggs
  • 1 cup, shredded cabbage
  • 1 tablespoon coconut oil
  • 0.5 medium, chopped red onion
  • 0.5 medium, chopped red bell pepper
  • 0.25 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

In a medium bowl, whisk together the eggs with sea salt and black pepper until well combined. Set aside.

Step 2

Heat the coconut oil in a medium-sized non-stick frying pan over medium heat.

Step 3

Once the oil is hot, add the chopped red onion and red bell pepper to the pan. Sauté for about 3-4 minutes until the vegetables start to soften.

Step 4

Add the shredded cabbage to the pan and continue to sauté for another 5 minutes, stirring occasionally, until the cabbage is tender.

Step 5

Spread the vegetable mixture evenly across the pan. Pour the beaten eggs over the vegetables, ensuring the eggs cover all the vegetables.

Step 6

Allow the omelette to cook undisturbed for about 3-4 minutes, or until the edges start to set and the bottom turns golden brown.

Step 7

Using a spatula, carefully flip the omelette over and cook for an additional 2-3 minutes, or until the eggs are fully cooked.

Step 8

Slide the omelette onto a serving plate and garnish with freshly chopped parsley.

Step 9

Serve immediately and enjoy your Paleo Cabbage Omelette.
