  • 2 large chicken breasts
  • 1 medium lime
  • 2 large avocados
  • 0.25 cup red onion
  • 0.5 cup cilantro
  • 1 medium tomato
  • 1 small jalapeño
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 4 cups mixed greens

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut the cauliflower into florets and pulse in a food processor until it reaches a rice-like consistency.

Spread the cauliflower rice on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon olive oil, season with 1/2 teaspoon chili powder, and 1/4 teaspoon sea salt. Toss well to coat.
