Ingredients

  • 1.5 pounds chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup hot sauce
  • 1 tablespoon coconut oil
  • 8 lettuce leaves
  • 1 cup, shredded napa cabbage
  • 1 cup, julienned carrots
  • 0.5 cup, chopped green onions
  • 2 avocado
  • 2 tablespoons lime juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the chicken breasts on a baking sheet and rub them with olive oil, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

Step 3

Bake the chicken in the preheated oven for 20-25 minutes, until cooked through and internal temperature reaches 165°F (75°C).

Step 4

While the chicken is baking, prepare the buffalo sauce by combining hot sauce and coconut oil in a small saucepan over low heat until the coconut oil melts and blends with the hot sauce.

Step 5

Once the chicken is cooked, shred it using two forks or a stand mixer with a paddle attachment.

Step 6

Pour the buffalo sauce over the shredded chicken and mix well to evenly coat the chicken.

Step 7

Prepare the avocado mash by mashing the avocados in a bowl and mixing them with lime juice.

Step 8

Build the sliders by placing a small amount of napa cabbage, julienned carrots, and chopped green onions inside each lettuce leaf.

Step 9

Top the vegetables with a portion of the buffalo chicken and a dollop of avocado mash.

Step 10

Fold the lettuce leaf around the fillings to form a small wrap or serve open-faced as sliders.

Step 11

Serve immediately and enjoy your Paleo Buffalo Chicken Sliders!
